An International Bitterness Unit is a concrete, measurable thing: one milligram of iso-alpha acid per litre of beer, determined by acidifying a sample, extracting into iso-octane and reading its absorbance at 275 nm. Everything on this page is arithmetic in service of predicting a laboratory measurement, and the arithmetic is the only dimensionally honest equation in this shard — mass of the bittering compound over volume, with no fitted constant anywhere in it.

The mass of alpha acids added is the hop weight times the alpha acid percentage printed on the package, and both halves of that product deserve suspicion. Alpha acid content varies by harvest year, by lot within a harvest, and by storage: hops lose alpha acids steadily even at freezer temperatures, and a two-year-old bag of Cascade stored warm can have shed a third of its bitterness. Use the analysis figure on the bag rather than the varietal average, and use hops that have been kept cold and oxygen-free — the deterioration is real and it is one of the larger error terms in the whole calculation.

The reason IBUs and perceived bitterness diverge is worth understanding, because the number is often asked to do a job it cannot. Iso-alpha acids are what the assay measures, but polyphenols and hop oils contribute to perceived bitterness without registering, and a heavily dry-hopped beer can read higher on the spectrophotometer than its iso-alpha content justifies. In the other direction, malt sweetness masks bitterness: an imperial stout at 60 IBU tastes balanced while a light lager at 60 IBU is punishing. Above roughly 100 IBU the measurement itself saturates, because iso-alpha acids stop dissolving and drop out with the trub and the yeast — the triple-digit IBU claims on some cans describe the calculation, not the beer.

Two practical points. Bitterness dilutes exactly as gravity does, so watering back an over-strength wort cuts IBUs in the same proportion and the recipe should be recalculated, not just the gravity. And bitterness fades: iso-alpha acids degrade over months in the package, so a hoppy beer measured fresh and the same beer measured at its best-before date are genuinely different products.
